Traditional Spanish Paella
Paella, the Spanish dish based on rice, is one of the most internationally famous recipes. It is also very versatile, that allows many variations, as long as two main ingredients are constantly present, rice and saffron. Other than that, this dish can really take many ingredients. Even rice can be of any type. I can buy a medium or long grain that can be found in any grocery store and makes a good paella.
Saffron however, is another matter. I still remember an invitation to a cookout paella in California many years ago. Preparation work at home
- In a medium saucepan, add 4 tablespoons of olive oil and heat for about minutes. Add the onion, garlic and green pepper and saute for about ten minutes. Drumlets Add chicken and cover. Then, add near-boiling water (with saffron and chicken stock cubes melted in). Mix all ingredients together for 5 minutes. Reduce heat to low. Salt to taste and make clams throughout the paella. Simmer until all water is absorbed and rice is tender, about 20 minutes.
